Such a great novelty meal and packed full of good plant fats and protien. You won’t regret trying this.
NOTE: This does make use of a couple of tinned items though they were organic. Make sure for optimal health you find tinned foods that are BPA free.
2 tbsp Rice Bran Oil or Coconut Oil
1 Brown Onion, finely diced
1 medium Carrot, diced
2 tbsp each Cumin powder, Coriander Powder + Smoked Paprika
1/2 tsp himalayan Salt
– fry in large saucepan (with lid aside), on medium heat until onions start to brown.
– then add..
2 cups Swiss Brown Mushrooms, diced
– stir through and fry for 3 mins.
1 can organic cooked Brown Lentils (or cook yourself)
1 can organic diced tomatoes
2 cups water
1 tbsp raw Apple Cider Vinegar
1 tbsp Tamari
3 tbsp Coconut BBQ Sauce
– bring to boil then reduce to simmer for 15mins
1/2 cup tamari almonds
3/4 cup raw or activated almonds
3/4 cup raw or activated walnuts
(Processed in Food processor until roughly chopped)
– stir through, add lid of saucepan for 3 minutes.
1 1/2 cups Cashews, soaked
Juice of 1 1/2 juicy lemon
3/4 cup or so, water
1 tsp Himalayan or Macrobiotic Salt
5 tbsp Nutritional Yeast flakes
1 1/2 tsp Turmeric powder
– blend until really smooth and creamy in a high speed blender. Pour into a squeezy bottle.
1 – 2 ripe medium Avocadoes
1 tsp Onion powder
Juice 1 juicy Lemon
5 Cherry Tomatoes, quartered then diced
1/4 bunch fresh Coriander, roughly chopped
2 tbsp Extra Virgin Olive Oil
2 pinches Macrobiotic Salt, or Himalayan
1/2 tsp cracked Black Pepper
– mash with a fork until well mixed together
2 x outer Leaves per plate on bottom
4-5 leaves shredded
As the base, I used Thomas Chipman Organic Corn Chips, with Carrot + Linseed.
You could always make your own at home and use those as the base.
On each plate:
2 × leaves of Cos lettuce
Almost 1/2 bag chips per serve
1 1/2 cups Nacho Meat on top in the middle
Very generous drizzle of the cheeze sauce all over the top
Good half cup of shredded cos lettuce in the middle on top
3 heaped tbsp guacamole on top in the middle for height
