Chocolate Coconut Roughie Bars

These are so easy, cheap, and a crowd favourite – with kids too!

Combine in a mixing bowl together:

  • 2 cups shredded coconut
  • 3/4 cup Cacao Powder
  • 1 cup Pepitas
  • 1/4 cup dried Blueberries
  • 1/3 cup dried Goji Berries
  • 1/2 cup Coconut oil
  • 1 tsp Vanilla paste/ 1/2 tsp powder
  • pinch sea salt
  • Optional 1/2 tsp superfood powders, e.g. maca, mushrooms, mucuna, acai/macqui etc

Spread evenly into a lined small baking tray. Optional to put into the dehydrater at 135 degrees F for 8 hours, or just place straight into the fridge for 1 hour to set. Once cold, and solid, remove from baking tray and slice into squares while still cold.

Store in the fridge for up to 3 weeks in an airtight container, or freezer for 5 months.
